"Indulgent" Indian cooking that is both healthy and delicious is the plan when a delivery service opens its first bricks and mortar restaurant.
Delivery service Foodhak is opening Jugad in Stables Market, off Chalk Farm Road next Thursday (September 5).
Jugad will bring its ‘food as medicine’ concept - a modern Indian menu that is gluten and dairy free and with no refined sugar - to the 92-seat restaurant, which has a 45-seat al fresco terrace,
The menu is designed by Jugad’s executive chef Jose Fernandesto, who has spent the past five years heading the kitchen at the Gunpowder Restaurant, which has outlets in Soho, Spitalfields and Tower Bridge.
Main courses include pan-fried sea bass with mole sauce and beetroot poriyal, Delhi-style butter chicken and beef with pepper skewers and pineapple salad.
Among small dishes are crab meat quail Scotch egg with tomato chutney, Bombay-style mini vada pao with dry garlic chutney and mint sauce, and pomegranate chicken wings with mustard dip.
A light sweet potato brownie with ayurvedic ice cream features on the dessert menu, alongside alle belle – a coconut and jaggery (cane sugar) pancake with saffron custard.
Olly Lambert will be behind the bar as Jugad’s head mixologist, serving a range of premium sprits, craft beers, wines and champagnes, alongside signature cocktails.
The restaurant will feature long, shared wooden tables with black block seating, exposed brick walls and velvet cushions, large abstract art pieces and soft furnishings, all lit with pendant lighting.
Customers can perch on the high stools or recline on a low table in an armchair .
Sakshi Chhabra Mittal, founder and chief executive of Foodhak, said Jugad - derived from the Hindi word meaning “innovative or irregular way of repairing” - embodies her belief in the possibility of eating in a sustainable way, and as naturally as possible.
"I faced the challenge of balancing a healthy diet with my love for dining out, which inspired the creation of Jugad by Foodhak," she said.
"The restaurant celebrates my Indian heritage with a modern twist.
"It’s a place where traditional Indian cuisine meets contemporary culinary techniques, offering an indulgent dining experience that is both healthy and delicious."
